A vibrant salad combining crunchy apples and nutty quinoa, tossed in a zesty dressing.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 2 medium apples, diced
- 1/2 cup fresh cranberries, chopped
- 1/4 cup pecans, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley or mint, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup (optional)
- Salt and pepper to taste
Instructions
- Start by rinsing the quinoa under cold water to remove its natural coating. Add the rinsed quinoa and water (or broth) to a pot, bring it to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes.
- While your quinoa is cooling, grab a large mixing bowl. Dice the apples and add them to the bowl, tossing them with lemon juice to prevent browning.
- Chop the cranberries, pecans, and red onion, then mix them into the bowl with the apples. Add the parsley or mint.
- Once the quinoa is cool, fold it gently into the apple mixture.
- In a small bowl, whisk together the lemon juice, olive oil, honey or maple syrup, then season with salt and pepper. Pour the dressing over the salad and toss everything together.
- Taste the salad and adjust the seasoning as necessary before serving.
Notes
Best served fresh, with the dressing added just before serving to maintain texture.
