Description

A vibrant, fresh salad with grilled shrimp, crunchy veggies, and a zesty marinade, perfect for summer.


Ingredients

  • 1 pound of fresh shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 tablespoons of lime juice, freshly squeezed
  • 1 teaspoon of garlic powder
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 4 cups of mixed salad greens (arugula, spinach, and romaine)
  • 1 cup of cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • Fresh cilantro or parsley for garnish
  • Optional: 1/4 cup of crumbled feta or goat cheese
  • Optional: A sprinkle of sunflower seeds or nuts
  • Optional: A dash of hot sauce

Instructions

  1. Start by marinating the shrimp. In a medium-sized bowl, combine olive oil, lime juice, garlic powder, chili powder, salt, and pepper. Add the shrimp to the bowl, toss to coat, and let it marinate for about 10-15 minutes.
  2. While the shrimp marinate, prepare the salad base. In a large salad bowl, layer the mixed greens, cherry tomatoes, avocado, cucumber, and red onion.
  3. Preheat your grill to medium-high heat. Once hot, add the marinated shrimp. Grill each side for about 2-3 minutes or until they’re pink and opaque.
  4. After removing the shrimp from the heat, let them cool for a minute while you prepare to assemble the salad.
  5. Gently place the grilled shrimp on top of your salad. If you’re adding cheese or nuts, now’s the time to sprinkle them on.
  6. Toss the salad lightly just prior to serving, or plate individual servings and drizzle with additional lime juice or your favorite dressing.

Notes

Consider substituting grilled tofu or chickpeas for a plant-based option. Serve in clear bowls for an elegant presentation.
