Description

Perfectly layered, portable burrito bowls in mason jars that stay fresh all week. An easy meal prep solution combining seasoned protein, rice, beans, and fresh vegetables with bold Mexican-inspired flavors.


Ingredients

  • 3 cups cooked rice (white or brown)
  • 2 cups black beans, drained and rinsed
  • 2 cups cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 2 cups romaine lettuce, chopped
  • 1 cup salsa (mild or spicy)
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. 1. Cook rice according to package directions and let cool completely. Season with lime juice, salt, and pepper.
  2. 2. Season chicken breast with cumin, chili powder, salt, and pepper. Cook until internal temperature reaches 165°F, then dice into bite-sized pieces.
  3. 3. Drain and rinse black beans. Heat in a small pan with a pinch of cumin for added flavor if desired.
  4. 4. Prepare all vegetables by washing, chopping cherry tomatoes, dicing bell pepper, and shredding lettuce.
  5. 5. Begin layering in wide-mouth quart-sized mason jars: Start with salsa at the bottom (about 2-3 tablespoons per jar).
  6. 6. Add a layer of seasoned rice, followed by black beans and corn mixture.
  7. 7. Layer diced chicken breast and red bell peppers.
  8. 8. Add shredded cheese, then top with chopped romaine lettuce.
  9. 9. Add a dollop of sour cream on top or pack separately in a small container.
  10. 10. Seal jars tightly with lids and refrigerate for up to 5 days. Shake before serving or pour into a bowl.

Notes

Store jars in the refrigerator at 40°F or below for up to 5 days. For best results, keep delicate ingredients like lettuce on top to prevent sogginess. Can be eaten cold or reheated (remove from jar first). Customize with your favorite toppings like avocado, jalapeños, or hot sauce.
