Instructions
- In a large mixing bowl, whisk together all the dry ingredients: flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, combine the wet ingredients: eggs, milk, pumpkin puree, vanilla extract, and melted butter. Mix smoothly until well combined.
- Gently pour the wet mixture into the dry ingredients. Stir just until combined; be careful not to overmix.
- Preheat your waffle iron. Lightly grease it with cooking spray or melted butter.
- Pour the batter onto the preheated waffle iron, using a ladle.
- Once cooked, carefully remove the waffles and keep them warm in the oven until all are ready.
