- Optional: 1/2 cup chopped nuts (like walnuts or pecans) or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract in a large mixing bowl.
- Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in another bowl.
- Add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the nuts or chocolate chips, if using.
- Line a muffin tin with paper liners or grease it lightly, then pour the batter into each muffin cup, filling them about 2/3 of the way full.
- Bake in the preheated oven for 20-25 minutes.
- Let your muffins cool in the pan for about 5 minutes before transferring them to a wire rack.
Notes
Optional healthier substitutes include using unsweetened applesauce for half the oil or whole wheat flour for all-purpose flour.
