- Optional: 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and greasing your loaf pan.
- Combine pumpkin puree, vegetable oil, granulated sugar, and brown sugar in a large mixing bowl until smooth.
- Add the eggs and vanilla extract, whisking until well combined.
- Mix the dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg) in a separate bowl.
- Gradually add the dry mixture into the wet ingredients, folding gently.
- Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Remove from the oven and let cool for 10 minutes before transferring to a wire rack.
Notes
Use unsweetened applesauce and flax eggs for healthier alternatives. Allow the bread to cool completely before slicing to maintain texture.
