Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or line it with parchment paper.
- Mix together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl.
- Whisk the vegetable oil, pumpkin puree, eggs, and vanilla extract in another bowl until smooth.
- Add the pumpkin mixture to the dry ingredients, stirring gently until just combined.
- Fold in the nuts or chocolate chips if desired.
- Pour the batter into the prepared pan, spreading it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10-15 minutes before transferring them to a wire rack.
