Description

A hearty and flavorful burrito bake combining seasoned meats, beans, cheese, and vibrant toppings, perfect for busy weeknights.


Ingredients

  • 1 pound ground turkey (or beef, chicken)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup cooked rice (brown or white)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 6 large flour tortillas
  • 1 cup salsa (mild, medium, or spicy, depending on your preference)
  • Optional toppings: sour cream, guacamole, chopped green onions, or cilantro

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure it’s nice and hot when you’re ready to bake the burrito.
  2. Cook the ground turkey (or your selected meat) in a large skillet over medium heat until browned, about 7–10 minutes. Drain any excess fat if using beef.
  3. Add the taco seasoning, diced tomatoes, black beans, corn, and cooked rice to the skillet. Stir together and allow to simmer for about 5 minutes.
  4. Spread a thin layer of salsa on the bottom of a baking dish to prevent sticking.
  5. Lay out the tortillas on your workspace. Spoon a generous amount of the turkey mixture onto each tortilla, sprinkle cheese on top, and roll them up tightly, placing them seam-side down in the baking dish.
  6. Pour the remaining salsa over the top of the burritos, followed by the rest of the shredded cheese.
  7. Cover the baking dish with aluminum foil and bake for about 20 minutes.
  8. Remove the foil and bake for another 10 minutes or until the cheese is bubbly and golden brown.

Notes

For a healthier version, use cauliflower rice or lentils, and consider whole wheat tortillas for extra fiber.
