- 8 cups of chicken broth
- 1 medium onion, chopped
- 2–3 carrots, sliced
- 2–3 celery stalks, chopped
- 4 cloves of garlic, minced
- 2 bay leaves
- Salt and pepper, to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1 cup milk
- 1/3 cup (about 5 tablespoons) unsalted butter, melted
Instructions
- Start by combining your chicken, chicken broth, onion, carrots, celery, garlic, and bay leaves in a large pot over medium heat. Bring everything to a gentle boil. Season with salt and pepper for flavor.
- Once boiling, reduce the heat and let it simmer for about 60 minutes or until the chicken is cooked thoroughly and tender. Remove the chicken from the pot, and let it cool before shredding the meat into bite-sized pieces. Discard the skin and bones. Return the shredded chicken to the pot.
- While the chicken cools, prepare the dumplings. In a separate bowl, mix the flour, baking powder, salt, and thyme together. Pour in the milk and melted butter, stirring until just combined to form a thick batter. Don’t overmix; this will keep your dumplings light and fluffy.
- After returning the chicken to the pot, drop spoonfuls of the batter into the simmering broth, ensuring they’re evenly spaced. Cover the pot with a lid and cook for about 15-20 minutes without lifting the lid.
- Check the dumplings for doneness—if a toothpick inserted comes out clean, they’re ready.
- Serve piping hot, ladled into bowls with plenty of broth. Top with fresh parsley if desired.

For healthier alternatives, consider using skinless chicken breasts, or plant-based options for a vegan version. Avoid lifting the lid while cooking the dumplings for best results.
