Description

A fun and flavorful dish blending sweet and tangy pineapple with tender chicken, perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1/2 cup bell pepper (any color, diced)
  • 1/4 cup onion (diced)
  • 1/4 cup soy sauce (or low-sodium soy sauce)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 tablespoon vegetable oil (or sesame oil for added flavor)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated, optional)
  • 1 tablespoon cornstarch (for thickening)
  • Salt and pepper (to taste)

Instructions

  1. Prep the ingredients: Start by gathering all your ingredients and chopping the chicken, bell peppers, and onion. Keep your fresh pineapple ready.
  2. Marinate the chicken: In a bowl, mix the soy sauce, honey, minced garlic, grated ginger (if using), salt, and pepper. Add the chicken thighs to this marinade, making sure they are well-coated. Allow them to marinate for at least 10 minutes.
  3. Heat the pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. Cook the chicken: Add the marinated chicken to the hot skillet, cooking it for about 5-7 minutes until browned on all sides.
  5. Add the vegetables and pineapple: Stir in the diced bell pepper, onion, and pineapple chunks. Cook for an additional 3-5 minutes until the vegetables soften slightly.
  6. Thicken the sauce: In a small bowl, mix the cornstarch with a splash of cold water to create a slurry. Pour this into the skillet, stirring constantly until the sauce thickens, about 2-3 minutes.
  7. Taste and adjust: Before taking it off the heat, taste the mixture and adjust salt, pepper, or sweetness with more honey if you prefer.
  8. Serve: Once everything is cooked through and the sauce is thick, remove from heat and let it rest for a minute before serving.

Notes

For a gluten-free version, use tamari instead of soy sauce. Consider garnishing with fresh cilantro or green onions for color and flavor.
