Pineapple Chicken Kebabs

Description

Juicy grilled chicken and caramelized pineapple chunks combined with colorful bell peppers and onions, all marinated in a sweet and savory Asian-inspired sauce for the perfect summer meal.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 1 medium fresh pineapple, cut into chunks
  • 2 large red bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 1/4 cup soy sauce
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lime juice
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. 1. In a large bowl, whisk together soy sauce, olive oil, honey, minced garlic, grated ginger, lime juice, paprika, black pepper, and salt until well combined.
  2. 2. Add chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 2 hours or up to 24 hours.
  3. 3. If using wooden skewers, soak them in water for 30 minutes before assembling kebabs.
  4. 4. Thread marinated chicken, pineapple chunks, bell pepper pieces, and onion wedges onto skewers, alternating ingredients and leaving small spaces between pieces.
  5. 5. Preheat grill to medium-high heat (375-400°F) and oil the grates to prevent sticking.
  6. 6. Place kebabs on the grill and cook for 5-6 minutes without moving, then rotate a quarter turn.
  7. 7. Continue grilling for a total of 12-15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F and has nice grill marks.
  8. 8. Remove from grill and let rest for 3-4 minutes before serving.

Notes

Store leftover kebabs (removed from skewers) in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 10 minutes or quickly on a hot grill. Serve with coconut rice, garden salad, or grilled vegetables. For meal prep, marinate chicken and prep vegetables up to 24 hours in advance.
