Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Combine the peanut butter, granulated sugar, and brown sugar in a large mixing bowl and mix until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- Whisk together the baking soda and salt in a separate bowl, then gradually add to the peanut butter mixture and mix until combined.
- Portion out the dough, rolling it into balls and placing them on the prepared baking sheets.

- Bake in the preheated oven for 10-12 minutes until edges are golden and centers look soft.
