Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup your favorite jelly or jam

Instructions

  1. 1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. 2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. 3. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 4 minutes.
  4. 4. Beat in egg and vanilla extract until fully combined and smooth.
  5. 5. Gradually add dry ingredients to wet mixture, mixing on low speed just until combined.
  6. 6. Scoop dough using a medium cookie scoop (about 2 tablespoons) and roll into balls.
  7. 7. Place dough balls on prepared baking sheets, spacing them 2 inches apart.
  8. 8. Press your thumb or the back of a small spoon into the center of each cookie to create an indentation.
  9. 9. Fill each indentation with about 1/2 teaspoon of jelly.
  10. 10. Bake for 10-12 minutes until edges are golden brown but centers still look slightly soft.
  11. 11. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Use any flavor of jelly or jam you prefer. Cookies are best when completely cooled before serving.
