Description
A refreshing summer salad combining juicy watermelon and sweet peaches with tangy feta cheese, fresh mint, and a honey-lime dressing
Ingredients
- Fresh watermelon, cubed – 4 cups
- Fresh peaches, sliced – 3 medium
- Fresh mint leaves, chopped – 1/4 cup
- Crumbled feta cheese – 1/2 cup
- Fresh lime juice – 2 tablespoons
- Honey – 1 tablespoon
- Extra virgin olive oil – 1 tablespoon
- Sea salt – 1/4 teaspoon
- Black pepper, freshly ground – Pinch
- Arugula or mixed greens (optional) – 2 cups
Instructions
- 1. Wash the watermelon thoroughly and cut into 1-inch cubes, removing all rind. Place in a large serving bowl.
- 2. Wash and slice the peaches into thin wedges, removing pits. Add to the bowl with watermelon.
- 3. In a small bowl, whisk together lime juice and honey until honey dissolves completely.
- 4. Slowly drizzle in olive oil while whisking continuously to create an emulsion. Season with salt and pepper.
- 5. If using greens, arrange them on a serving platter or in the bottom of a large bowl.
- 6. Add the watermelon and peach mixture on top of greens or in the serving bowl.
- 7. Drizzle the honey-lime dressing over the fruit.
- 8. Sprinkle crumbled feta cheese and fresh mint leaves over the top.
- 9. Toss gently to combine all ingredients, being careful not to break up the fruit.
- 10. Serve immediately or refrigerate for up to 30 minutes before serving for best texture and flavor.
Notes
This salad is best enjoyed fresh but can be prepared a few hours ahead by keeping components separate. Store cut fruit in airtight containers and combine with dressing, feta, and mint just before serving. Leftover salad can be stored for 1 day but may release liquid. For a vegan version, omit feta or use plant-based cheese alternative.
