- 4–5 ripe peaches, peeled and sliced
- 1 cup brown sugar
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk (or almond milk for a lighter version)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Sprinkle the brown sugar evenly across the bottom of the pan, then melt the butter and pour it over the brown sugar. Arrange the peach slices on top in a visually stunning pattern.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing thoroughly after each.
- Mix in the vanilla extract.
- Whisk the flour, baking powder, and salt in another bowl. Gradually add this mixture to the wet ingredients, alternating with the milk.
- Pour the batter over the arranged peaches and smooth the top with a spatula.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10-15 minutes before flipping it onto a plate.
