Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3 cups fresh peaches, peeled and sliced (about 4–5 medium peaches)
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal once baked.
  2. Combine the flour, granulated sugar, baking powder, and salt in a mixing bowl. Use a fork or pastry cutter to blend in the softened butter until the mixture resembles coarse crumbs. Add the egg and vanilla extract, mixing until just combined to form a soft dough.
  3. Press about two-thirds of the dough into the bottom of the prepared baking dish, creating an even layer. This will be your crust.
  4. Mix the sliced peaches, brown sugar, cornstarch, lemon juice, and optional cinnamon in another bowl until the peaches are well-coated. Spread this filling evenly over the crust in the baking dish.
  5. Crumble the remaining dough over the peach filling, ensuring it covers most of the surface but allows some peach to peek through.
  6. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  7. Let the bars cool in the dish for about 10 minutes. Use the parchment overhang to lift the bars out of the dish and cool completely on a wire rack before cutting into squares.

Notes

Serve warm or at room temperature, paired with vanilla ice cream or whipped cream for extra decadence. Use clean knife cuts for neat squares.
