- 1/4 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 3/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup chopped pecans (optional)
Instructions
- 1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
- 2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Toss until the peaches are evenly coated, then transfer to the prepared baking dish.
- 3. In a separate bowl, mix together the flour, oats, brown sugar, cinnamon, and salt.
- 4. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingertips to work it in until the mixture resembles coarse crumbs with pea-sized butter pieces.
- 5. Stir in the chopped pecans if using.
- 6. Sprinkle the topping evenly over the peach filling, creating clusters for extra crispiness.
- 7. Bake for 40-45 minutes, or until the topping is golden brown and the fruit filling is bubbling around the edges.
- 8. Remove from the oven and let cool for 10-15 minutes before serving.
- 9. Serve warm with vanilla ice cream, whipped cream, or enjoy as is.
Notes
Store leftovers covered in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15 minutes or microwave individual portions for 30-45 seconds. Can be frozen unbaked for up to 3 months. Best served warm with vanilla ice cream or whipped cream.
