- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch

- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Combine flour, oats, brown sugar, melted butter, salt, and cinnamon in a large mixing bowl and stir until crumbly.
- Toss sliced peaches with lemon juice, granulated sugar, cornstarch, and vanilla extract in another bowl.
- Beat the softened cream cheese in a separate bowl until smooth; then add sugar, vanilla extract, and egg, mixing until creamy.
- Sprinkle the reserved crumble topping over the cheesecake layer and bake for 30-35 minutes, or until golden.
- Cool completely in the pan before lifting out and cutting into squares to serve.
Notes
For gluten-free, use gluten-free flour; for vegan, use vegan cream cheese and coconut oil instead of butter.
