Ingredients

  • ¾ cup rolled oats
  • ½ cup packed brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, melted
  • 4 cups fresh or frozen peaches, sliced
  • ⅓ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together all the crust ingredients—flour, oats, brown sugar, baking powder, salt, and melted butter until combined. Press a little more than half into the bottom of your prepared baking dish.
  3. In a separate bowl, combine the sliced peaches, granulated sugar, cinnamon, lemon juice, and cornstarch. Mix gently until the peaches are coated, then spread this mixture over the crust.
  4. To prepare the cheesecake swirl, beat the softened cream cheese until smooth. Add the sugar, egg, and vanilla extract. Blend until creamy, then spoon dollops over the peaches.
  5. Sprinkle the remaining oat mixture over the top of the cheesecake swirl.
  6. Bake in the preheated oven for about 35 minutes or until the top is golden brown and the filling is bubbly. Let cool completely before cutting.
