  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour (OR gluten-free flour for a gluten-free version)
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted (OR coconut oil for a dairy-free version)
  • 1/2 cup milk (OR almond milk for a dairy-free option)
  • 8 oz cream cheese, softened (OR vegan cream cheese)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a medium-sized bowl, mix together the sliced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch. Stir gently and set aside.
  3. Grab another large bowl for the cobbler base. Whisk together the flour, sugar, baking powder, and salt. Pour in the melted butter and milk, stirring until just combined.
  4. Pour half of the cobbler batter into your prepared baking dish. Spread it out evenly across the bottom.
  5. Gently spoon the peach filling over the cobbler base, distributing it evenly.
  6. For the cheesecake swirl, in another bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and egg. Beat until smooth.
  7. Spoon dollops of the cheesecake mixture over the peaches and swirl it gently with a knife.
  8. Dollop the remaining cobbler batter over the cheesecake layer.
  9. Bake in the preheated oven for about 40-45 minutes or until golden brown and a toothpick comes out clean.
  10. Let the bars cool completely in the pan before slicing into squares.

Notes

Serve warm with vanilla ice cream or drizzle with caramel sauce for added richness.
