Description

A moist and fluffy peach cake topped with rich brown sugar frosting, perfect for summer gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh peaches, peeled and diced
  • ½ cup unsalted butter, softened (for frosting)
  • 1 cup brown sugar, packed (for frosting)
  • ¼ cup milk (any type, for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round baking pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, incorporate the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with buttermilk, starting and ending with the flour mixture.
  6. Fold in the diced peaches evenly throughout the batter.
  7. Divide the batter between the prepared pans and smooth the tops. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  9. In a saucepan over medium heat, combine the butter and brown sugar until it boils. Boil for 2 minutes without stirring, then remove from heat and stir in the milk and vanilla.
  10. Mix in the powdered sugar until smooth.
  11. Frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.

Notes

For a gluten-free version, swap all-purpose flour for almond flour. Use applesauce instead of eggs for lower fat content.
