Description

  • 4 boneless, skinless chicken breasts (6–8 oz each)
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. 1. Preheat your oven to 425°F and line a baking sheet with parchment paper or lightly grease with olive oil.
  2. 2. Pat chicken breasts completely dry with paper towels. If needed, pound to even thickness (about 3/4 inch throughout).
  3. 3. Season both sides of chicken lightly with salt and pepper.
  4. 4. In a medium bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Mix well.
  5. 5. Spread mayonnaise evenly over both sides of each chicken breast, creating a thin but complete coating.
  6. 6. Press the Parmesan mixture firmly onto all sides of each mayonnaise-coated chicken breast, ensuring even coverage.
  7. 7. Arrange coated chicken breasts on the prepared baking sheet, spacing them apart so they don’t touch.
  8. 8. Bake for 20-25 minutes until the coating is golden brown and the internal temperature reaches 165°F at the thickest part.
  9. 9. Remove from oven and let rest for 5 minutes before serving.
  10. 10. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat in a 375°F oven for 10-15 minutes to maintain crispiness. Can be frozen before or after cooking for up to 3 months. Use freshly grated Parmesan for best results rather than pre-grated varieties. The mayonnaise can be replaced with sour cream or Greek yogurt, though results may vary slightly.
