Ingredients
1½ cups uncooked orzo pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, finely sliced
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions
Bring a pot of salted water to a boil and cook orzo according to package directions. Drain and let cool slightly.
In a large bowl, combine cooked orzo, tomatoes, cucumber, red onion, feta, and parsley.
In a small bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper.
Pour dressing over the salad and toss gently until well coated.
Chill for 15 minutes before serving for best flavor.
