Description

A quick and flavorful dish featuring shrimp, garlic butter, and pasta cooked all in one pot, perfect for busy weeknights.


Ingredients

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 6 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1 tsp red pepper flakes (optional)
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by melting the butter in a large pot over medium heat.
  2. Once the butter is melted, toss in the minced garlic and sauté until fragrant.
  3. Add the uncooked pasta to the pot, followed by the chicken broth. Stir well.
  4. Once boiling, reduce the heat to a simmer and cook the pasta until al dente.
  5. After cooking, gently fold in the shrimp, cherry tomatoes, and red pepper flakes.
  6. Stir in the baby spinach, lemon juice, and zest. Season with salt and pepper.
  7. Serve immediately, garnished with fresh parsley.

Notes

For gluten-free, use gluten-free pasta. For lower-carb, consider zucchini noodles.
