- 1 pound small shrimp, peeled and deveined
- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 1 cup fresh spinach, chopped
- 1/2 cup parmesan cheese, grated
- 1/2 cup onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the orzo to the skillet, stirring well to coat it with the oil, onion, and garlic mixture.
- Pour in the chicken broth and season with Italian seasoning, salt, and pepper. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally.
- Once the orzo is nearly tender, add the shrimp and chopped spinach. Continue to cook until the shrimp turn pink and opaque, approximately 3-5 minutes.
- Remove from heat and stir in the grated parmesan cheese and lemon zest.
- Serve hot, garnished with fresh parsley for a pop of color.
Notes
For a vegetarian version, swap shrimp for mushrooms or zucchini. Use vegetable broth instead of chicken broth for a meat-free alternative.
