Instructions

  1. Start by preparing your workspace. Line an 8×8 inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. In a large mixing bowl, combine rolled oats, cocoa powder, and salt. Stir these dry ingredients together until well mixed.
  3. In a separate bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract. Microwave this mixture for about 30 seconds to make it easier to combine. Stir until it’s smooth and well-blended.
  4. Pour the wet mixture into the dry mixture and stir until everything is evenly coated. If you’re adding chocolate chips, nuts, or any optional ingredients, fold them in now.
  5. Transfer the mixture into the lined baking pan, using a spatula to press it firmly down. Make sure it’s evenly flat.
  6. Cover the pan with plastic wrap or foil, then refrigerate for at least 30 minutes. This step is crucial as it helps the bars set and become firm.
  7. After chilling, remove the bars from the pan using the parchment overhang. Cut them into squares or rectangles of your desired size.
