Description

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 tablespoons milk (or a dairy alternative)
  • 2 tablespoons olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: garlic powder or fresh garlic, minced
  • Optional: shredded cheese (like feta) for a creamy finish

Instructions

  1. Start by prepping your ingredients. Wash and chop the spinach, slice the mushrooms, and if using, mince the garlic.
  2. Heat the olive oil or butter in a non-stick skillet over medium heat.
  3. Add the mushrooms and sauté for about 3-4 minutes, or until they are golden brown.
  4. If using garlic, add it at this point and sauté for an additional minute.
  5. Toss in the chopped spinach, stirring until it wilts down.
  6. In a bowl, whisk the eggs and milk together until fully combined.
  7. Pour the egg mixture into the skillet over the sautéed vegetables.
  8. Allow the eggs to sit for a few seconds, then gently stir with a spatula.
  9. Sprinkle cheese over the eggs once they’re nearly cooked to your liking.
  10. Remove the skillet from heat once the eggs are fluffy and the cheese is melted.

Notes

Try adding diced onions or bell peppers for extra flavor and texture.
