A delicious meatloaf stuffed with gooey mozzarella cheese, cooked slowly in a crockpot for ultimate convenience.
Ingredients

- 2 pounds ground beef (or turkey or chicken)
- 1 cup breadcrumbs (gluten-free if needed)
- 1 cup shredded mozzarella cheese
- 1 egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: Fresh herbs like parsley or basil for garnish
- Optional: 1/4 cup grated Parmesan cheese
- Optional: Marinara sauce for serving
Instructions
- Begin by combining the ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, Italian seasoning, salt, and pepper in a large mixing bowl. Mix everything together until just combined.
- Lay half of the meat mixture into the bottom of the greased crockpot, forming an even layer.
- Create a well in the center of the meat mixture and place the shredded mozzarella cheese inside. Cover with the remaining half of the meat mixture.
- Cover your crockpot with the lid and let it cook. Optionally, drizzle marinara sauce or sprinkle more mozzarella cheese during the last 30 minutes.
- Check the internal temperature of the meatloaf; it should be at least 160°F for ground beef or 165°F for poultry. Cook longer if necessary.
Notes
For a lighter option, substitute ground beef with lentils or use a meat substitute.
