Delicious and healthy brownies that incorporate grated zucchini for added moisture and nutrition.


Ingredients

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup all-purpose flour (or gluten-free flour)
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar (or coconut sugar)
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. Combine the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Mix the sugar and oil in another bowl, then add the eggs one at a time, beating well after each addition.
  4. Grate the zucchini and squeeze out any excess moisture with a towel.
  5. Add the dry ingredients to the wet mixture gradually and stir until just combined. Fold in the zucchini and chocolate chips.
  6. Pour the batter into the prepared dish and spread it evenly. Bake for 30–35 minutes until a toothpick comes out clean.
  7. Let the brownies cool in the pan for at least 10 minutes before cutting.

Notes

Substitute applesauce for oil for a healthier option. Grate zucchini in advance to save time.
