Description
A light and flavorful Hawaiian cake bursting with sweet pineapple goodness, topped with rich cream cheese frosting.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup crushed pineapple (with juice)
- ½ cup vegetable oil
- 4 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
- Combine the flour, sugar, baking soda, and salt in a large mixing bowl.
- Whisk together the crushed pineapple (with juice), vegetable oil, eggs, and vanilla in another bowl.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Divide the batter evenly between the prepared pans.
- Bake the cakes for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat the softened cream cheese and butter until creamy, then gradually add the powdered sugar and mix until smooth.
- Assemble the cake by frosting the top of one layer, stacking the second layer on top, and frosting the top and sides.
Notes
For a chunkier texture, substitute crushed pineapple with diced fresh pineapple. Add shredded coconut for extra flavor.
