Ingredients
4 medium flour tortillas
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
1 cup fresh spinach (lightly sautéed and drained)
½ cup roasted red peppers (sliced and patted dry)
¼ cup sliced Kalamata olives
1 tablespoon olive oil (for brushing tortillas)
½ teaspoon dried oregano
Optional: ½ cup grilled chicken or ½ cup chickpeas
Instructions
Preheat a nonstick skillet over medium heat.
Lightly brush one side of each tortilla with olive oil.
Place one tortilla oil-side down in the skillet.
Sprinkle a thin layer of mozzarella cheese evenly over the tortilla.
Add feta, spinach, roasted red peppers, olives, oregano, and optional protein.
Top with another small layer of mozzarella.
Place the second tortilla on top, oil-side up.
Cook for 3–4 minutes until the bottom is golden brown.
Carefully flip and cook for another 2–3 minutes until crispy and cheese is melted.
Remove from skillet, let rest for 1–2 minutes, then slice into wedges.
