Description

Juicy, flavorful chicken meatballs packed with feta cheese, fresh herbs, and Mediterranean spices. Perfect for healthy dinners, meal prep, or entertaining guests.


Ingredients

  • 1.5 pounds ground chicken
  • 3/4 cup feta cheese, crumbled
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup red onion, finely diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 tablespoon lemon zest
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. 2. In a large mixing bowl, combine ground chicken, crumbled feta cheese, chopped spinach, diced red onion, and minced garlic.
  3. 3. Add fresh parsley, dill, dried oregano, ground cumin, lemon zest, breadcrumbs, egg, salt, and black pepper to the bowl.
  4. 4. Mix all ingredients gently with your hands or a wooden spoon until just combined, being careful not to overmix.
  5. 5. Wet your hands slightly and scoop about 2 tablespoons of mixture for each meatball, rolling into 1.5-inch balls.
  6. 6. Place meatballs on the prepared baking sheet, spacing them about 1 inch apart.
  7. 7. Lightly brush the tops of meatballs with olive oil for golden browning.
  8. 8. Bake for 20-25 minutes, turning halfway through, until golden brown and internal temperature reaches 165°F.
  9. 9. Remove from oven and let rest for 5 minutes before serving with tzatziki sauce, pita bread, and Greek salad.

Notes

Store cooled meatballs in an airtight container in the refrigerator for up to 4 days. Freeze cooked meatballs for up to 3 months. Serve with tzatziki sauce, hummus, over rice or couscous, in pita sandwiches, or with roasted vegetables. For extra moisture, add 1 tablespoon Greek yogurt to the mixture.
