Description

A creamy, flavorful chicken dish that combines garlic, sun-dried tomatoes, and spinach in a rich sauce. It’s often said to be so delicious that it might lead to a marriage proposal!


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach, roughly chopped
  • 1 cup grated Parmesan cheese
  • Fresh basil, for garnish
  • Optional: Crushed red pepper flakes, for some heat

Instructions

  1. Season your chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Place the seasoned chicken breasts in the pan and sear for 5-7 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and set aside. Lower the heat, then add the minced garlic to the skillet and sauté for about 30 seconds.
  3. Sprinkle in the Italian seasoning, then pour in the chicken broth and bring to a gentle simmer.
  4. Stir in the heavy cream (or half-and-half), followed by the sun-dried tomatoes and spinach. Cook for about 2 minutes until the spinach wilts.
  5. Gradually stir in the grated Parmesan cheese until the sauce is creamy and well combined.
  6. Return the chicken to the skillet, making sure it is well-coated in the sauce. Simmer for an additional 5 minutes.
  7. Garnish with fresh basil and serve immediately.

Notes

For a dairy-free alternative, use coconut cream. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
