Description

Delicious mango oatmeal crumble bars with a buttery crust and sweet filling, perfect for a warm treat.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted (or coconut oil for dairy-free)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and diced (about 2 cups)
  • 1 tablespoon lemon juice
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. Combine rolled oats, flour, brown sugar, melted butter, cinnamon, and salt in a mixing bowl.
  3. Set aside about 1 cup of the mixture for topping and press the remaining mixture into the bottom of the baking dish.
  4. Toss diced mangoes with lemon juice, honey, and cornstarch in a separate bowl.
  5. Spread the mango filling evenly over the crust.
  6. Sprinkle the reserved crumble mixture on top of the mangoes.
  7. Bake for about 25-30 minutes until the top is golden brown and the filling is bubbly.
  8. Allow to cool for at least 10-15 minutes before cutting into bars.

Notes

For gluten-free, use almond flour. For vegan, substitute with coconut oil and maple syrup.
