Description

Delicious peanut butter bars reminiscent of childhood lunches, perfect for snacks or dessert trays.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine the creamy peanut butter, granulated sugar, and brown sugar in a large bowl. Mix until smooth.
  3. Add the eggs and vanilla extract to the mixture. Stir until blended.
  4. Whisk together the rolled oats, baking soda, and salt in a separate bowl. Slowly fold this into the peanut butter mixture.
  5. Pour the batter into the prepared baking dish, smoothing out the top.
  6. Bake for 25 minutes, or until golden brown.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, use flax eggs instead of real eggs. Store in an airtight container for up to three days at room temperature.
