- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup sour cream (or Greek yogurt)
- Optional toppings: sliced green onions, diced avocados, cilantro, crushed tortilla chips
Instructions
- Preheat your oven to 375°F (190°C). In a large skillet, brown the ground beef or turkey over medium heat until cooked through.
- Add the diced onion, bell pepper, and minced garlic. Cook until the onions are translucent, about 3-5 minutes.
- Stir in the drained diced tomatoes, diced green chilies, taco seasoning, and cauliflower rice. Let it simmer for about 5 minutes.
- Layer half of the meat mixture in a 9×13 inch baking dish. Dollop half of the sour cream on top and sprinkle with cheddar and Monterey Jack cheeses.
- Repeat the layering process with the remaining ingredients, ensuring the top layer is cheese-rich.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it sit for about 5-10 minutes before serving to help everything set.
