Description

A creamy and delicious low carb protein pudding that’s perfect for a quick snack or dessert, easily customizable for various tastes.


Ingredients

  • 2 cups unsweetened almond milk (or any low carb milk)
  • 1 scoop of your favorite low carb protein powder (chocolate or vanilla)
  • 1/4 cup unsweetened cocoa powder (for chocolate lovers)
  • 2 tablespoons chia seeds
  • 1 tablespoon sweetener of choice (stevia or erythritol)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional toppings: Fresh berries, whipped cream (low sugar), nuts or seeds

Instructions

  1. Combine the almond milk, protein powder, cocoa powder, chia seeds, sweetener, vanilla extract, and salt in a mixing bowl. Whisk everything together until it’s well blended.
  2. Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours or overnight.
  3. Stir the pudding after chilling, and adjust the consistency with more almond milk if needed.
  4. Serve in bowls or cups, topped with fresh berries, whipped cream, or nuts.

Notes

This pudding can be made vegan and gluten-free. Ensure to use suitable protein powder and sweetener.
