Low Carb Cabbage Roll Casserole

Description

A deconstructed version of traditional cabbage rolls that’s low in carbs but high in flavor. This easy casserole features seasoned ground beef, tender cabbage, cauliflower rice, and melted cheese.


Ingredients

  • 2 pounds ground beef (80/20)
  • 1 medium head green cabbage, chopped (about 2 pounds)
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 15 oz can tomato sauce (no sugar added)
  • 14.5 oz can diced tomatoes (no sugar added)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 cups cauliflower rice
  • 1½ cups shredded mozzarella cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. 1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it into crumbles.
  3. 3. Add diced onion and minced garlic to the beef, cooking until softened and fragrant, about 3-4 minutes.
  4. 4. Stir in tomato sauce, diced tomatoes, tomato paste, beef broth, paprika, oregano, salt, and pepper. Simmer for 5 minutes.
  5. 5. In the prepared baking dish, layer half the chopped cabbage, followed by half the cauliflower rice, then half the meat mixture.
  6. 6. Repeat layers with remaining cabbage, cauliflower rice, and meat mixture.
  7. 7. Cover tightly with aluminum foil and bake for 45 minutes.
  8. 8. Remove foil, sprinkle mozzarella cheese on top, and bake uncovered for 15 minutes until cheese is melted and bubbly.
  9. 9. Let rest for 5-10 minutes before serving.

Notes

Store leftovers in airtight containers in the refrigerator for up to 5 days. Freezes well for up to 3 months. The flavors improve after sitting overnight. Can substitute ground turkey or chicken for a lighter version.
