  • 1 cup low-carb BBQ sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: Fresh herbs for garnish (like parsley or cilantro)

Instructions

  1. Preheat your grill to medium heat, around 350°F.
  2. Pat the chicken dry with paper towels.
  3. Combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper in a small mixing bowl.
  4. Rub this mixture all over the chicken thighs, ensuring an even coating.
  5. Place the chicken skin-side down on the grill and cook for about 5-7 minutes until the skin is golden brown and crispy.
  6. Flip the chicken thighs and brush on the low-carb BBQ sauce generously.
  7. Close the lid and continue to grill for another 15-20 minutes, or until the internal temperature reaches 165°F.
  8. Take the thighs off the grill and let them rest for about 5 minutes.
  9. Serve immediately, drizzling any additional BBQ sauce and garnish with fresh herbs if desired.
