Description
Golden, crispy zucchini fritters made healthier in the air fryer with almond flour. Perfect low-carb side dish or appetizer with only 3-4g net carbs per serving.

- 3 cups grated medium zucchini
- 1 teaspoon sea salt
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh dill
- Olive oil spray as needed
Instructions
- 1. Grate zucchini using the large holes of a box grater. Sprinkle with salt and let sit for 10-15 minutes.
- 2. Transfer zucchini to a clean kitchen towel and squeeze out as much moisture as possible.
- 3. In a large bowl, combine squeezed zucchini, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, black pepper, and fresh dill. Mix until well combined.
- 4. Preheat air fryer to 375°F for 3-5 minutes.
- 5. Form mixture into patties about 3 inches wide and 1/2 inch thick.
- 6. Lightly spray air fryer basket with olive oil spray. Place fritters in basket, leaving space between each one.
- 7. Cook for 8 minutes, then carefully flip each fritter.
- 8. Continue cooking for 7-10 more minutes until golden brown and crispy on both sides.
- 9. Remove from air fryer and serve immediately with your favorite dipping sauce.
Notes
Store cooled fritters in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months. Reheat in air fryer at 350°F for 4-5 minutes to restore crispiness. Can be made in a conventional oven at 400°F for 20-25 minutes, flipping halfway.
