Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup Greek yogurt, plain and unsweetened
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 cup celery, finely chopped
  • 1 cup red grapes, halved (or diced apples)
  • 1/4 cup walnuts or sliced almonds (optional)
  • Salt and pepper to taste
  • Fresh herbs like dill or parsley for garnish (optional)

Instructions

  1. Start by preparing your cooked chicken. If using rotisserie chicken, shred it directly from the bone.
  2. In a large mixing bowl, add Greek yogurt, Dijon mustard, and lemon juice. Mix them together until smooth.
  3. Toss in the chopped celery and grapes. Stir to evenly distribute.
  4. Add your cooked chicken to the bowl and gently fold it into the mixture.
  5. Season your salad with salt and pepper to taste.
  6. Finally, if using nuts, fold them in gently.
  7. Garnish your salad with fresh herbs before serving.

Notes

Serve over mixed greens or in a whole grain wrap. Be careful not to overmix to maintain chicken texture.
