  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, diced
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 cup shredded lettuce or greens
  • 1 cup shredded cheese (cheddar, Mexican blend, or dairy-free)
  • 1/2 cup sour cream or Greek yogurt (or dairy-free alternative)
  • Fresh cilantro, chopped (optional)
  • Lime wedges for serving
  • Sliced jalapeños for heat (optional)
  • Salsa or pico de gallo for extra flavor (optional)

Instructions

  1. Start by preparing your base. Cook the brown rice or quinoa according to package instructions. Once cooked, fluff it up and get it ready to be layered.
  2. While the base is cooking, heat a large skillet over medium heat. Add your ground turkey or chicken. Let it cook until browned, stirring occasionally. Once browned, add the taco seasoning and a splash of water. Mix that together and let it simmer for about 5 minutes; this is where the magic happens as those spices infuse the meat.
  3. In the same skillet, add the corn and black beans. Stir them into the cooked protein, mixing all those delicious flavors together. Cook for just a few minutes until everything is heated through.
  4. Assemble your taco bowl. Start by placing a generous scoop of rice or quinoa in the bottom of your bowl. Layer it with the flavorful meat mixture, followed by the cherry tomatoes, red onion, bell pepper, and lettuce.
  5. Don’t forget the toppings! Sprinkle on cheese, dollop with sour cream, and add diced avocado. If you’re feeling adventurous, toss in jalapeños or fresh cilantro for that extra zing!
