Ingredients

  • 12 oz fresh lo mein noodles or dried Chinese egg noodles
  • 3 tablespoons vegetable oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium carrots, julienned
  • 1 large bell pepper, sliced
  • 1 cup snow peas
  • 2 cups cabbage, shredded
  • 4 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon brown sugar
  • 1/2 teaspoon white pepper
  • 1/4 cup chicken or vegetable broth

Instructions

  1. 1. Bring a large pot of water to boil and cook noodles according to package directions until al dente, about 2-3 minutes for fresh noodles or 4-6 minutes for dried. Drain, rinse with cold water, and toss with a small amount of oil to prevent sticking.
  2. 2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, brown sugar, white pepper, and broth until sugar dissolves. Set aside.
  3. 3. Heat a wok or large skillet over high heat until smoking. Add vegetable oil and swirl to coat.
  4. 4. Add minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant.
  5. 5. Add carrots and bell pepper, stir-frying for 2 minutes until slightly tender but still crisp.
  6. 6. Add snow peas and cabbage, continuing to stir-fry for another 2-3 minutes until vegetables are crisp-tender.
  7. 7. Push vegetables to the sides of the wok and add cooked noodles to the center. Pour sauce mixture over noodles.
  8. 8. Toss everything together using a lifting and folding motion for 2-3 minutes until noodles are well-coated and heated through.
  9. 9. Remove from heat, sprinkle with chopped green onions, and serve immediately while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet with a splash of water or broth for best results. Add protein like chicken, shrimp, beef, or tofu by cooking it separately first, then combining with vegetables. For extra heat, drizzle with chili oil or sriracha before serving.
