Ingredients

  • 1 cup freshly squeezed lemon juice (about 4–6 lemons)
  • 1 cup granulated sugar
  • 2 cups water
  • A pinch of salt
  • Zest of 2 lemons (optional for enhanced flavor)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Begin by squeezing the lemons to get about a cup of fresh lemon juice. Fresh juice is key here; bottled lemon juice just doesn’t cut it when it comes to flavor. After juicing, zest two of the lemons for an additional layer of citrus flavor.
  2. In a pot, combine the water and sugar over medium heat. Stir until the sugar completely dissolves, making a simple syrup. This usually takes about 2-3 minutes. Once it reaches a simmer, remove it from the heat and let it cool.
  3. Once your syrup has cooled down, add the freshly squeezed lemon juice and a pinch of salt. The salt will enhance the flavors, really brightening up the citrus. If you’re adding zest, toss that in too.
  4. Pour this refreshing mixture into a shallow dish or an ice cream maker. If you’re opting for an ice cream maker, follow the manufacturer’s instructions. If you don’t have one, no problem! Place the shallow dish in your freezer.
  5. Stir the mixture every 30 minutes with a fork for about 3-4 hours. This will help break up any ice crystals that form, resulting in a smoother texture. Once it’s fully frozen and you can’t mix anymore, it’s done!
  6. When you’re ready to serve your lemon sorbet, pull it out of the freezer and let it sit at room temperature for a few minutes to soften slightly. Use an ice cream scoop or a spoon to serve it up.

Notes

For a lower-calorie option, consider using sweetener substitutes like honey or agave syrup. Serve with mint leaves or fresh berries for added flavor.
