- 1 pound large shrimp, peeled and deveined
- 1 bunch of asparagus, trimmed and cut into 2-inch pieces
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Juice of 1 lemon (about 3 tablespoons)
- Zest of 1 lemon
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by prepping your ingredients. Peel and devein the shrimp, trim the asparagus, and mince the garlic.
- Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the asparagus. Sauté for about 3-4 minutes until the asparagus is bright green and slightly tender but still crisp.
- Push the asparagus to one side of the skillet and add the minced garlic to the other side. Sauté for about 30 seconds, being careful not to burn the garlic.
- Add the shrimp to the skillet alongside the asparagus. Cook for another 3-4 minutes until the shrimp turn pink and opaque, stirring frequently.
- Squeeze the lemon juice over the shrimp and asparagus. Add the lemon zest, salt, pepper, and optional red pepper flakes. Toss everything together and let it cook for an additional minute.
- Remove from heat and garnish with fresh parsley before serving.
