Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups fresh blueberries
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • 2–3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and lemon zest.
  4. Whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
  5. Fold in the blueberries gently with a spatula.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the cream cheese frosting by beating the softened cream cheese and butter until smooth, then gradually adding the powdered sugar, lemon juice, and vanilla.
  10. Once the cakes are fully cool, spread a layer of frosting on one cake layer, then top with the second layer and frost the top and sides.
  11. Garnish with additional blueberries and lemon zest, if desired. Slice, serve, and enjoy!

Notes

For a dairy-free version, replace cream cheese and butter with vegan alternatives. Gluten-free flour can be used in place of all-purpose flour.
