Tropical layered popsicles combining creamy coconut, sweet strawberries, and tangy pineapple for a refreshing frozen treat that tastes like Hawaiian paradise
Ingredients
- Frozen strawberries – 2 cups
- Sugar (divided) – 1/4 cup
- Coconut cream – 1 can (13.5 oz)
- Sweetened condensed milk – 1/2 cup
- Vanilla extract – 1 teaspoon
- Fresh pineapple chunks – 2 cups
- Pineapple juice – 1/4 cup
- Honey – 2 tablespoons
- Lime juice – 1 tablespoon
Instructions
- 1. Blend thawed strawberries with 2 tablespoons sugar until smooth. Pour into popsicle molds, filling one-third full. Freeze for 30-45 minutes until slushy.
- 2. Whisk together coconut cream, sweetened condensed milk, and vanilla extract until smooth and well combined.
- 3. Blend pineapple chunks with pineapple juice, honey, lime juice, and remaining sugar until smooth.
- 4. Carefully pour coconut mixture over partially frozen strawberry layer, filling another third of the mold. Freeze for 30 minutes.
- 5. Add pineapple mixture as the final layer, pouring gently to create swirls. Insert popsicle sticks.
- 6. Freeze for 6-8 hours or overnight until completely solid.
- 7. To remove, run warm water over the outside of molds for 15-20 seconds and gently pull out popsicles.
Notes
Store wrapped popsicles in an airtight container for up to 3 months. For easier removal, use silicone molds. Adjust sweetness based on fruit ripeness. Can substitute mango for pineapple or raspberries for strawberries.
