- 1 cup ricotta cheese (optional)
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh basil or parsley, for garnish
Instructions
- Begin by heating a large pot over medium heat. Add in your ground beef or turkey sausage, breaking it apart with a spoon. Cook until browned, which should take about 5-7 minutes. Drain any excess fat if necessary, leaving behind a bit to add flavor to the veggies.
- Toss in your diced onion and minced garlic. Sauté these for about 3-4 minutes, or until the onion becomes translucent.
- Pour in your chicken or beef broth along with the crushed tomatoes and tomato paste. Stir everything together to combine. Add Italian seasoning, salt, and pepper. Bring this mixture to a gentle boil and then reduce to a simmer.
- Once simmering, add the zucchini noodles. Let the soup cook for an additional 10-15 minutes, allowing the noodles to soften while soaking up all those amazing flavors.
- Just before serving, stir in the ricotta cheese if you’re using it.
- Serve hot, garnished with shredded mozzarella and a sprinkle of fresh basil or parsley.
