Description

  • 2 cups cooked chicken breast, shredded
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, finely chopped
  • 2 tablespoons taco seasoning (sugar-free)
  • 3 tablespoons butter or ghee
  • 1/4 cup sour cream
  • 2 tablespoons jalapeños, sliced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. 1. In a bowl, combine shredded chicken with taco seasoning, mixing thoroughly to ensure even distribution of spices.
  2. 2. Heat a large skillet over medium heat and add one tablespoon of butter, allowing it to melt completely.
  3. 3. Place one low-carb tortilla flat on your work surface and sprinkle a thin layer of cheese on one half.
  4. 4. Add a quarter of the seasoned chicken mixture, bell peppers, onions, and jalapeños if using, distributing evenly.
  5. 5. Top the filling with additional cheese, then fold the tortilla in half, pressing down gently to seal.
  6. 6. Carefully transfer the assembled quesadilla to the heated skillet and cook for 3-4 minutes until golden brown on the bottom.
  7. 7. Flip the quesadilla carefully using a large spatula, adding a bit more butter to the pan if needed.
  8. 8. Cook for an additional 3 minutes on the second side until golden brown and cheese is fully melted.
  9. 9. Remove from heat and let rest for 1-2 minutes before slicing into triangles.
  10. 10. Repeat the process with remaining tortillas and filling, adding butter to the pan as needed.
  11. 11. Serve hot with sour cream, fresh cilantro, and a squeeze of lime juice.

Notes

Store leftover quesadillas wrapped individually in foil in the refrigerator for up to 4 days. Reheat in a skillet or oven for best texture. These freeze well for up to 2 months when wrapped tightly. Use rotisserie chicken for an even quicker preparation time.
