Description

A simple yet delicious recipe for juicy oven-baked chicken thighs that are perfect for weeknight meals or meal prep.

Ingredients

Scale
  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or sweet)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning or herbs de Provence (optional)
  • Juice of half a lemon (optional for zest)
  • Fresh herbs for garnish (like parsley or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Gather your chicken thighs and pat them dry with paper towels.
  3. Combine the olive oil, garlic powder, onion powder, paprika, salt, black pepper, and Italian seasoning in a mixing bowl.
  4. Rub the seasoning mixture all over the chicken thighs.
  5. Place the seasoned chicken thighs on a baking sheet lined with parchment paper or foil.
  6. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5 minutes before slicing.

Notes

Feel free to swap out olive oil for other oils or substitute chicken thighs for breasts. Adding red pepper flakes can increase the spice level.
